We were recently invited by Hotel El Ganzo to get an exclusive first taste of their new menu, crafted by the talented José Luis Hinostroza, before its official debut. Born in San Diego and raised on the border, Chef Hinostroza brings a unique blend of cultures and flavors to life in every dish.

It’s a favorite among celebrated artists such as LP, Parcels, and Natalia Lafourcade because it offers a safe and inspiring space for creativity. With its breathtaking scenery, proximity to the ocean, and serene atmosphere, the hotel serves as a blank canvas for artists. Inspired by the rich cultural diversity of Baja California, the new Mexican menu at Hotel El Ganzo features the freshest local ingredients, beautifully infused with touches of Asian and Mediterranean influences. This innovative culinary experience showcases the fusion of cultures that defines our region.
During our exclusive preview, we enjoyed several standout dishes. The guacamole was elevated with crispy kale, sesame seeds, toasted nori, and served with griddled tostadas. We also savored jurel in a radish and chile de árbol aguachile, complemented by scallions and jícama. The Baja-style fish tacos were another highlight, featuring local catch in an amaranth and mezcal tempura, topped with cilantro crema and pico de gallo. Lastly, we were treated to a vibrant salad of smoked beets, radicchio, goat cheese, basil, toasted pumpkin seeds, and a zesty orange and chile morita vinaigrette.
As the sun set over the Sea of Cortez, the incredible vibe of Hotel El Ganzo truly came to life. The atmosphere was electric, with live music by El Ganzo’s band setting the perfect backdrop for the evening. The service was impeccable, with attentive staff ensuring our glasses were never empty and our needs were met. Chef José Luis was present throughout the evening, personally explaining each dish with passion and detail, enhancing the dining experience.
To complement the meal, we sipped on refreshing mezcalitas, which perfectly balanced the smoky richness of mezcal with the bright, zesty flavors of citrus. It was the ideal pairing for the innovative dishes we enjoyed.
